Sweet Potato Yams with Marshmallow Sauce

1: Bake your sweet potato for 45 minutes at 350°F.

2: Peel the baked sweet potatoes, and break them down into quarter pieces.

3: In a small pan, melt butter and brown sugar, adding lemon juice to prevent crystallization. Add cinnamon and vanilla extract, stirring until thick.

4: Pour the mixture over the sweet potatoes and bake for an additional 10 minutes.

5: In a pan, melt a half stick of butter and add 2 cups of marshmallow, stirring until thickened, then add 1 cup of half/half.

6: Stir in the Courvoisier to the marshmallow sauce.

7: Chop pecans and spread them over the yams before serving.
